Goat Rack
The rack of goat is a delicious roasted alone or 2 – 3 racks can be tied together to form an elegant crown roast. Goat racks are generally smaller than lamb racks and have less fat. They are very tender and do best when cooked Rare to Medium Rare. Our half rack option is perfect for two.
We love to encrust our rack with salt, cumin, coriander, cinnamon, chile and black pepper, then sear in a pan and finish in the oven until 120F at the center, only 15-20 minutes. Let rest 10 minutes then cut and reveal the beautiful pink red meat. The ribs can be "frenched" or roast them with the cut and save them for chewing at the end of the night, BELIEVE ME! The meat between the ribs is delicious!!!! I steal rib bones from peoples plates when they don't clean them enough......
