Goat Osso Bucco
Best cut for braising along with the shanks. Osso Bucco is basically shanks sliced into 1-2 inch slices. This way you can extract more of the bone marrow and the meat cooks faster. Osso Bucco is beautiful served on a plate. Each slice is a nice single serving, when cooked properly your fork will slice right through the meat.
Delicious over rice or polenta or stuffed in tacos. Can be used for stews or any slow cooking method. The joints make an amazing broth so we recommend cooking them long and slow in a lot of liquid so you can soak up all the good collagen out of the joints. Our family braises them and then adds tomato. You can then go a European route and add rosemary, black pepper, garlic, marjoram, parsley. Or go a warmer route with cinnamon, cumin, coriander, turmeric, garlic, clove, ginger etc. You can even pull the meat off and cook the bones longer to extract as much of the collagen and bone marrow as possible. Make a decadent and rich sauce.
Each package includes 2 broken front shanks
Goat meat is lean and sweet with less saturated fat, cholesterol and calories than beef, chicken or pork. It is high in protein and iron and one of the most widely consumed meats in the world, except for the USA.
Our goats are 100% pasture raised and also browse in the forest for happier animals, environmental friendliness and superior taste.
Apart from being delicious, goat meat is a high protein. It's a healthy red meat, full of vitamins and minerals. Not only is it a great source of protein, but goat meat is also full of Vitamins B6, B12, C, E, A, and K, as well as Iron, Calcium, Phosphorus, Zinc, Copper, Manganese, Selenium, Potassium, and low in Sodium. This combination of very high protein, vitamins, and minerals makes goat meat one of the most nutrient dense foods on the planet. On a global scale, 65% of meat consumed in the world is goat.
We strive to show the USA that goat meat is not only sustainable, but very healthy and delicious when raised well!
