Goat Osso Buco
Best cut for braising along with the shanks. Osso Buco is basically shanks sliced into 1-2 inch slices. This way you can extract more of the bone marrow and the meat cooks faster. Osso Buco is beautiful served on a plate. Each slice is a nice single serving, when cooked properly your fork will slice right through the meat.
Delicious over rice or polenta or stuffed in tacos. Can be used for stews or any slow cooking method. The joints make an amazing broth so we recommend cooking them long and slow in a lot of liquid so you can soak up all the good collagen out of the joints. Our family braises them and then adds tomato. You can then go a European route and add rosemary, black pepper, garlic, marjoram, parsley. Or go a warmer route with cinnamon, cumin, coriander, turmeric, garlic, clove, ginger etc. You can even pull the meat off and cook the bones longer to extract as much of the collagen and bone marrow as possible. Make a decadent and rich sauce.
