Goat Sirloin is great oven roasted or put on the grill and sliced thin. Tender lean sirloin meat has a beautiful fat cap to prevent charing the meat. We love to dry rub it with salt, rosemary, and black pepper. Grill it briefly (its a thin cut so 10 minutes is plenty) until the center reads 125 degrees F. It will be nice pink red in the center and very juicy. This cut is best cooked rare to medium, over cooking it will make it tough.
Goat meat is lean and sweet with less saturated fat, cholesterol and calories than beef, chicken or pork. It is high in protein and iron and one of the most widely consumed meats in the world, except for the USA.
