Goat Sirloin
Goat Sirloin is great oven roasted or put on the grill and sliced thin. It also make great Kabob for skewers. More tender than leg, but not as tender as loin. The sirloin meat has plenty of flavor and a beautiful fat cap to prevent charring the meat. We love to dry rub it with salt, rosemary, and black pepper. Grill it briefly (its a thin cut so 10 minutes is plenty) until the center reads 135 degrees F. It will be pink in the center and very juicy. Or cut it into big peices and remove any chewy bits, marinade the kabob in marjoram, pepper, olive oil and red wine vinegar. Then put on skewers with fresh summer veggies and grill. This cut is best cooked to medium.
